Ingredients
1 (12 oz) pkg penne pasta
1 stick butter
2 green onions, sliced
4 cloves garlic, finely minced
2 cups half-and-half
1 Tbs Cajun seasoning, to taste
1 (12 oz) pkg frozen, cooked crawfish tails (thawed and drained)
1/2 cup parmesan cheese, grated
1 tsp salt
1/2 tsp paprika
1/2 tsp black pepper
1 Tbs fresh parsley, chopped
Directions
  1. Cook pasta according to package directions. Drain well; set aside. Melt butter. Sauté green onions and garlic until soft. 
  2. Stir in the half-and-half and Cajun seasoning gradually to taste, so the desired level of heat is achieved. Cook over medium heat for about 5 minutes. Add crawfish. Cook for 5 to 10 more minutes, or until nicely thickened and heated through. Stir in the pasta, parmesan, salt, paprika and black pepper. Garnish with parsley before serving.
